Zucchini Tortelini Soup

Several weeks ago we had dinner at a friends house and she made a Meatball and Zucchini soup that was so tasty.  She sent me the recipe and I read over it a couple of times.  Tonight I created my own take on her recipe with the ingredients I had on hand.

2 cups of Chicken broth
1 large can of diced tomato
1 small onion
3 celery stalks
2 zucchini squash
garlic
Salt and Pepper
1 TBSP Thyme
2 TBSP butter
1 package refrigerated tortellini ( I used Whole wheat cheese but I think any would work)


Cook the onions and garlic in the butter until clear.   Add the Chicken broth and all other ingredients and simmer for 30 minutes.


This was really tasty and pretty easy.
